I'd say Sloppy Joes are reminiscent of my childhood, but honestly, my mom never made them! But I can certainly understand the appeal for a working mom. Sloppy Joes come together in minutes. They're saucy, warm, tasty. What more could you want in a dinner? Asian fusion, that's what!!
I took all the flare and flavor of a traditional Vietnamese Bahn Mi and served it up Sloppy Joe style! If you've never had a Bahn Mi, allow me to elaborate. It's a Vietnamese sandwich typically made with pork, sometimes chicken. The meat usually has an Asian BBQ-y kinda vibe. And it's topped with pickled veggies like carrots, cucumber, and daikon. There's often a few jalapeno slices on there for a bit of fresh heat. And all this goodness is piled into a crusty French bread roll.
Sandwich together a Bahn Mi and a Sloppy Joe, and what do you get?! A Bahn Joe!
Bahn Joes
Ingredients
For the quick pickles
· 1 cups rice vinegar
· 1 ½ tbsp sugar
· 1 ½ tbsp soy sauce
· ¾ cup shredded carrots
· ½ english cucumber, sliced very thin
For the sauce
· 6 tbsp hoisin sauce
· 3 tbsp rice vinegar
· 2 garlic cloves, minced
· 1 tbsp fish sauce
For the sriracha mayo
· 4 tbsp mayo
· 2-4 tsp sriracha
For the sandwiches
· 2 tbsp vegetable oil
· 1lb ground chicken
· 4 burger buns, toasted
· ¼ cup cilantro, chopped
For the quick pickles… whisk together the vinegar, sugar, and soy sauce. Once the sugar has dissolved, add the carrots and cucumbers. Toss the vegetables in the brine mixture. Chill in the fridge for at least 30 minutes.
For the sauce… whisk together all ingredients in a small bowl and set aside.
For the mayo… add mayo to a small bowl. Whisk in sriracha to your taste. Set aside.
For the sandwiches… heat the oil in a medium skillet over medium heat. Add the chicken. Crumble and brown the chicken. Once the chicken is cooked through, reduce the heat to low and add the sauce. Cook for another 2-3 minutes until the sauce thickens.
To build the sandwiches… spoon a heaping portion of the chicken onto the bottom of a burger bun. Top the meat with a handful of pickled carrots and cucumbers and a sprinkle of cilantro. Spread sriracha mayo on the top bun and sandwich on top of the pickles. Repeat with the remaining buns and chicken. Serve hot.
