Buffalo Chicken Casserole

The further I get down the road of this working mom thing, I more frequently I find myself searching for quick and easy recipes. I'm often looking for midweek dinners that can be prepared with few ingredients, light prep work, and in little time.
My friend and I were recently swapping some favorite recipe inspiration for just such an occasion (aka the early evening scramble to get something hot on the table). She raved about a Buffalo Chicken Casserole she had been making. This is my ode to that same dish with the volume turned up a bit.
Buffalo Chicken Casserole
Ingredients
· 4oz cream cheese, softened
· ½ cup greek yogurt
· 5oz buffalo style hot sauce
· 1oz package dry ranch seasoning
· 6 scallions, sliced
· 2 cups shredded cheddar cheese, divided
· 1lb rotisserie chicken, shredded, skin removed
· 9oz package microwave rice (white or brown)
· 12oz frozen cauliflower rice
· 1 ½ cups crushed nacho corn chips (like Doritos)
Preheat oven to 375F.
In a large mixing bowl, combine the cream cheese and Greek yogurt using a spatula. Once smooth, mix in the hot sauce, ranch seasoning, scallions, and 1 cup of the cheddar cheese. Fold in the shredded chicken.
Using your hands, break up the rice and frozen cauliflower while still in the package. This will make it easier to incorporate evenly. Stir the rice and cauliflower into the cream cheese mixture.
Grease a 2.5qt baking dish. Spread the casserole mixture evenly into the prepared baking dish. Top the casserole with shredded cheese followed by crushed nacho chips.
Bake for 35 to 40 minutes until the top is golden and the center is hot and bubbly.
If desired, garnish with more sliced scallions and serve with crudities.
