Burrata Bruschetta

Bruschetta is a go-to appetizer of mine. It's hard to go wrong with fresh tomatoes, basil and garlic - crowd-pleasing flavors for sure. Plus it comes together in a flash, and the ingredients are always cheap and readily available. It's easy to scale up for a party or down for a quiet evening at home.

Classic Tomato Bruschetta on its own is delightful. But mound it (and I do mean mound it) on top of fresh Burrata and now you've got something divine! Still just as quick and easy, but with a little creamy cheese thrown in for good measure.
Burrata Bruschetta
Ingredients
For the bruschetta
· 4 roma tomatoes, seeded and diced
· 2 heaping tbsp fresh basil, chopped
· 2 large garlic cloves, grated
· 4 tbsp olive oil
· Pinch of salt
· Black pepper to taste
· 8oz fresh burrata cheese
· 1-2 tbsp balsamic reduction
For the crostini
· 1 baguette
· Olive oil
· Salt
· 1 garlic clove
Preheat oven to 425F.
For the bruschetta… in a medium bowl, mix together the tomatoes, basil, grated garlic, olive oil and salt. Season to taste with fresh black pepper. Allow the tomatoes to marinate in the fridge for at least 10 minutes or up to a few hours.
While the tomatoes marinate, prepare the crostini… slice the baguette on the bias into 1/2in slices. Line a baking sheet pan with parchment. Arrange the slices of baguette across the pan – the slices can be rather close. Drizzle the bread slices with just a bit of olive oil. Sprinkle each of the slices with a bit of salt. Toast in the oven for about 5 to 7 minutes until golden brown. Using tongs, flip each of the bread slices and toast on the other side for another 3 to 5 minutes.
Just after removing the crostini from the oven, rub each of the toasts with a peeled clove of garlic.
Place the burrata in the middle of a large serving platter and top with the tomato bruschetta. Garnish with a drizzle of balsamic reduction. Arrange the crostini around the burrata on the serving platter.
