Chicken Apple Sausage Hoagie

I spend a fair bit of time and energy preparing meals all week long. By the time the weekend rolls around, I don't have much gas left in the tank to cook something over the top for Saturday lunch. Most often we throw together a deli meat sandwich, fry up a few hot dogs, or hell, even reach for The Blue Box!


This weekend I was craving something warm and hearty for lunch. Initially I was thinking I might grill few brats, but I decided I'd let the flavors of the season inspire me. I reached for a package of Chicken Apple Sausage instead. With so much tasty flavor already packed into these sausages, very little additional effort is require to push these guys over the finish line.


That said, I thought it might be delicious to lean into my German roots and whip up a quick kraut to serve up on top of the sausages. I purchased a can of prepared sauerkraut and dressed it up a bit with loads of diced apple and onion. The sausages are nestled in with the kraut and cooked together with a splash of apple cider to really drive home that apple-y point.


After a quick simmer, the sausages are ready for a toasty hoagie roll, a squirt of dijon mustard and a pile of the apple kraut. If you've got 30 minutes, you've got time for Chicken Apple Sausage Hoagies!

Chicken Apple Sausage Hoagie


Ingredients

· 2tbsp olive oil

· 4 chicken apple sausages

· 1/2 onion, diced fine

· 1 large Granny Smith apple, peeled and diced

· 1 tsp sweet paprika

· 1 15oz can sauerkraut, drained and rinsed

· ¼ tsp black pepper

· 1 bay leaves

· 1 cup apple cider

· 4 hoagie rolls, toasted

· Dijon mustard


Heat the olive oil in the bottom of a deep skillet over medium high heat. Brown the sausages on all sides and remove from the pan.


Reduced the heat of the pot to medium low. Add the onion and apples. Sautee until the onions are translucent. Add the paprika and fry for 2-3 minutes. Add the sauerkraut, black pepper, bay leaf, and apple cider. Stir to combine.


Return the sausages to the pan and nestle them into the sauerkraut. Cover and simmer for at least 20 minutes on low heat until the apples are softened.


Serve the sausages in toasted hoagie rolls topped with Dijon mustard and a heaping spoonful of the sauerkraut.

Simply swap the rolls for your favorite GF variety. Schar hot dog rolls work well for this sandwich.
