French Toast Cups
Ingredients
For the French Toast
· 6 eggs
· 1 cup half & half
· ¼ cup maple syrup
· 1 tsp cinnamon
· Pinch of salt
· 1 tsp vanilla extract
· ½ tsp almond extract
· Zest of an orange
· 4 cups cubed, day old bread (Challah, cinnamon raisin, French bread)
For the Streusel
· 2 tbsp brown sugar
· ¼ cup flour
· ¾ tsp cinnamon
· Pinch of salt
· 3 tbsp chilled butter, cubed
· Powdered sugar, if desired
· Maple syrup, if desired
Preheat oven to 350F.
For the French Toast…grease a muffin pan.
In a large mixing bowl, whisk together the eggs, half & half, syrup cinnamon, salt, extracts and zest. Mix in the bread cubes. Allow to soak for 5 to 10 minutes. Divide the bread mixture evenly among the 12 muffin cups.
For the Streusel… in a small mixing bowl, stir together the sugar, flour, spices and salt. Add the butter and pinch into the flour mixture using the tips of your fingers. The mixture should resemble coarse crumbs. Sprinkle the streusel evenly over the top of each French Toast Cup.
Bake for 25-30 minutes until the center is puffed and the top is golden brown. Gently remove the cups from the pan. Serve hot. If desired, dust with powdered sugar and serve with maple syrup.
Makes 12 cups
