Grilled Pineapple Salsa

For lots of delicious carmelization, I grilled up all of the ingredients - pineapple, jalapeno, onions, even the limes! Toss in a handful of fresh cilantro and you've got yourself a tasty salsa.
Grilled Pineapple Salsa is particularly delicious over pork chops or grilled fish. I also enjoy it as a dip with chips!
Grilled Pineapple Salsa
Ingredients
· 8 spears of pineapple
· 1 jalapeno, halved and seeded
· ½ small red onion, sliced thick
· 2 limes, halves
· 1/3 cup cilantro, chopped
Preheat a grill pan over medium high heat.
Spray with non-stick spray. Add pineapple, jalapeno, onion and lime to the grill pan. Grill for 3 minutes and flip the pineapple, jalapeno and onions. Grill for another 3-5 minutes until the fruit and vegetables are tender. Remove all ingredients from the grill pan and set aside to cool.
Finely dice the pineapple and onion and add to a mixing bowl. Mince the jalapeno and cilantro and add to the pineapple and onions. Juice the limes over the mixture and stir to combine. Add half of the mixture into the bowl of a food processor. Blend until relatively smooth and add back to the original bowl. Combine.
Wrap in plastic or store in an air-tight container. Chill for 4-6 hours before serving.
Spoon over grilled chicken or fish. Or simply serve as a dip with tortilla chips.
