Pickle Dip


We entertain often during the summer months over poolside cocktails. I like serving up snacks that are easily made in advance, feed a crowd, and perfectly munchable. I have several yummy dips in my rotation - Smoked Queso, Kitchen Sink Hummus, and Buffalo Chicken Dip are among my favorites. And I'm thinking this Pickle Dip will make a more regular appearance going forward.


This dip is creamy and packed full of briny pickles and fresh dill. It pairs wonderfully with a classic ruffled potato chip.


Pickle Dip


Ingredients

·       6 tbsp whipped cream cheese

·       6 tbsp Greek yogurt

·       1 tbsp Dijon mustard

·       3 tsp ranch seasoning dip mix

·       ¼ tsp hot sauce

·       2 scallions, minced

·       2 tbsp fresh dill, chopped

·       1 ½ tbsp pickle brine

·       ½ cup dill gherkin pickles, diced fine

·       8oz smoked cheddar, shredded

·       2-3 tbsp milk

·       Ruffled potato chips or pretzel chips, for dipping


In a medium bowl, whisk together the cream cheese, Greek yogurt, and Dijon. Add the ranch seasoning, hot sauce, scallions, dill and pickle brine. Fold in the pickles and cheese. Mix until fully combined. Drizzle in the milk until reaching the desired consistency – thick but easily dippable.


Spoon into a small bowl or ramekin. Chill until ready to serve. Serve with potato chips or pretzels.  


Serves 4-6
