Prague Potato Skillet

There is absolutely nothing fancy about Prague Potato Skillet, but boy is it comforting and delicious!
I studied abroad my sophomore year of college. During that time, I spent a weekend in Prague. Being a college student, I was skint but still on the search for fabulous food. A few blocks off the main square down a squiggly cobblestone road, we found a local pub for lunch. Their menu featured a huge section of potato skillets - some kinda pork cut, potatoes, creamy sauce and a sprinkle of veggies for good measure.
SO satisfying. So much so that I returned to this very same pub for lunch when I returned to Prague a few years later on business travel.
Prague Potato Skillet is inspired by this little pub and the delicious meal I enjoyed years ago!
Prague Potato Skillet
Ingredients
· 2 tbsp olive oil
· 1 small onion, diced
· 2 garlic cloves, minced
· 1lb smoked sausage, sliced thin
· 1.5lb gold potatoes, cubed
· 2 tsp paprika
· 1 tsp dried dill
· ½ tsp salt
· ½ tsp pepper
· 1 ½ cup chicken stock
· 4 cups fresh spinach, chopped
· ¼ cup sour cream
· 2 tbsp parmesan cheese, grated
Heat olive oil in a large skillet over medium-low heat. Sautee onions and garlic until translucent. Add potatoes and sausage. Sautee for about 2 minutes. Season with paprika, dill, salt and pepper.
Add the chicken stock and bring to a simmer. Cover and simmer over low heat for about 15-20 minutes or until the potatoes are fork tender. Fold in the spinach and cook until the spinach wilts.
Just before serving, stir in the sour cream. Sprinkle over parmesan cheese.
