Quick Salmon Burgers

While not abundantly seasonal, this recipe is quite timely!


In the week leading up to Thanksgiving, I'm usually looking for dinners that come together quickly and are relatively light. Gotta save on time and calories for the big holiday. These Salmon Burgers fit that bull.


Of course, you can make your salmon burgers from scratch, but mid-week I like to cut that corner and purchase prepared patties. These days, you can find some pretty tasty ones at the fish counter or in the freezer section. I also reach for a bag of pre-shredded coleslaw.


I do, however, like to throw together my own tartar sauce dressing for the coleslaw. Store-bought tartar sauce tends to be more mayonnaise than anything else, and I'm a big fan of the else! I load my dressing with pickles, capers, dijon, and fresh dill. A perfectly briny and crisp topping for the Salmon Burgers. Top with a few slices of avocado, and you've got yourself a fabulous sandwich.


Quick Salmon Burger


Ingredients

For the tartar sauce slaw

· 2 tbsp mayo

· 2 tbsp plain Greek yogurt or sour cream

· 1 tbsp Dijon mustard

· 1 tbsp white vinegar

· 2 tbsp dill pickles, diced

· 1 tbsp capers, roughly chopped

· 1 tbsp fresh dill, chopped

· ½ tsp black pepper

· 2 tbsp water

· 8oz shredded coleslaw mix


For the burgers

· 1 tbsp olive oil

· 4 4oz frozen salmon burgers

· 4 burger buns, toasted

· 2 avocados, sliced

· Dijon mustard


For the slaw… combine all ingredients but the coleslaw in the bottom of a medium mixing bowl using a whisk. Once thoroughly combined, add the coleslaw. Toss the coleslaw in the tartar sauce dressing.


For the burgers… heat the olive oil in a large, non-stick skillet over medium heat. Cook the salmon patties per package instructions frying on both sides in the pan.


Place the cooked burgers on toasted buns. Top each of the burgers with slices of avocado and a heaping spoon of tartar sauce coleslaw. Spread a bit of Dijon mustard on the top bun before topping the burgers.


Serve hot!


Serves 4




Gluten Free Friendly!

Substitute gluten free bread crumbs, and serve up on your favorite GF bun. We enjoy Trader Joe’s gluten free burger buns!
