Tofu Stir Fry

While my mom was in town helping me with the girls, she whipped up a quick stir fry for dinner one evening. And I thought to myself, damn this is tasty, and healthy too! So naturally, I needed to fine tune a recipe for many repeat Stir Fry evenings to come.
Stir Fries are endlessly customizable. Pick some of your favorite proteins and veggies and you've got the makings of a tasty, fresh bowl. I opted for a rainbow of veggies all of which could be julienned making for a very cohesive forkful. And while I often cook with lean chicken breasts, I thought tofu might be a nice change of pace.
Veggies and tofu alone might be quite bland. So I whisked together a sweet and spicy sauce to pour over the Stir Fry.
Whisk, chop, fry, and you've got yourself a wonderfully quick and healthy Tofu Stir Fry.
Tofu Stir Fry
Ingredients
For the sauce
· 2 tbsp soy sauce
· 1 tbsp grated ginger
· 1 tbsp gochujang
· 1 tbsp hoisin sauce
· 1 tbsp brown sugar
· 2 tsp sesame oil
· 2 tsp water
For the stir fry
· 16oz extra firm tofu
· 2 tbsp corn starch
· 2 tbsp canola oil
· ½ onion, sliced thin
· 1 zucchini, julienned
· 1 red pepper, julienned
· 1 carrots, julienned
· 6oz snow peas, trimmed
· 4 garlic cloves, minced
· 6 scallions, sliced thin
For the sauce… whisk together all ingredients in a small measuring cup or bowl. Set aside.
For the stir fry… drain the tofu. Dice the tofu into 1 inch cubes. Scatter the tofu into a single layer onto a sheet pan lined with paper towels. Pat dry with more paper towels. Set aside while preparing the veggies.
Just before frying, sprinkle the cornstarch evenly over the tofu cubes. Toss gently to coat.
Heat the oil in a large wok or skillet over medium high heat. Add the tofu and fry in the oil until pale golden brown. Remove the tofu from the wok. Add all of the vegetables and garlic to the wok. Toss and stir the veggies periodically cooking for about 5 minutes until the veggies heat through and just begin to soften.
Return the fried tofu to the wok. Pour the sauce over the tofu and veggies. Gently stir the tofu and veggies until coated in the sauce. Sprinkle over the sliced scallions.
Serve over steam white or brown rice.
