Avocado Toast Dip


Ingredients

·       4-6 ripe Hass avocados

·       Juice of a lemon

·       Salt and pepper, to taste

·       ½ cup cherry tomatoes, halved

·       ¼ cup sliced pickled onions

·       ¼ cup crumbled feta cheese

·       Balsamic glaze, to taste

·       Multigrain crackers or crostini, for serving


Halve the avocados and remove the pits. Score the avocados and scoop the flesh into a medium mixing bowl. Pour over the lemon juice and a pinch of salt and pepper. Lightly mash the avocado using a fork. The avocados should still be slightly chunky.


Spread the avocados onto a serving platter. Artfully top with the tomatoes, pickled onions, and feta cheese.


Just before serving, drizzle the top with balsamic glaze. Serve with crackers or toasty crostini.


Serves 4-6
