Bacon Spinach Egg Bagels

Who doesn't love a good breakfast sandwich? A mini spinach, egg frittata is topped with bacon and gouda, and sandwiched between an everything bagel. It's a rib-sticking, grab-and-go breakfast.
You can certainly bake these up as you want them. But I prefer to make a batch and stash in the freezer for a super easy, hot breakfast in a flash. They freeze up beautifully!
I like to load up the frittata with plenty of spinach to pack some veggies into my breakfast. And I top with turkey bacon to ratchet back the calories and fat. Really, it's just a good excuse to make some caloric room for a piece of cheese!
Our household is gluten free due to my husband's allergy. So I make these sandwiches using Trader Joe's Gluten Free Everything Bagels. Of course, you can use your favorite bagel brand. If Everything isn't exactly your jam, swap for sesame, asiago, potato, even plain. Sky's the limit here!
Bacon Spinach Egg Bagels
Ingredients
· 1 tbsp olive oil
· ¼ cup onion, diced fine
· 4 cups spinach
· 6 eggs
· ¼ cup milk
· ½ tsp paprika
· ¼ tsp salt
· ¼ tsp pepper
· 4 everything bagels
· 4 slices pre-cooked bacon or turkey bacon, cut in half
· 4 slices smoked gouda
Preheat oven to 375F.
Heat olive oil in a medium skillet. Sautee onions over medium-low heat until translucent. Add spinach. Sautee until spinach is wilted. Remove from pan and allow to cool.
Once the spinach is cooled, place into the center of a few paper towels and wrap up. Wring out any excess liquid from the spinach. Scatter the spinach evenly into the bottom of 4 4-in silicone cake molds.
In a large measuring cup, whisk together the eggs, milk, paprika, salt and pepper. Whisk vigorously until the eggs are frothy. Pour the eggs evenly over the spinach mixture.
Place the silicone molds onto a baking sheet. Bake for 12-15 minutes until the eggs are puffed in the center and cooked through.
To prep for the freezer… slice a bagel in half. Top with an egg, 2 pieces of bacon, and a slice of cheese. Wrap the bagel sandwich in plastic wrap. Repeat with the remaining bagels. Store the bagels in a Ziploc bag in the freezer. When ready to serve, remove the plastic wrap. Wrap the bagel in a paper towel. Microwave for 2-2.5 minutes until the center is warmed through.
To serve immediately… while the eggs are cooking, slice bagels in half and toast. Top each bagel with an egg, 2 pieces of bacon, and a slice of cheese.
Makes 4 sandwiches
