Creamy, Dreamy Queso

Being Texan, I fancy myself a queso aficionado. I promise you, this is the only queso recipe you'll need. Period.
I like my queso to have flavor - something more than simply melted cheese. That punch of flavor comes from a mix of hot pork sausage and a mix of chili peppers. If you'd like to tone down the heat, remove the seeds from the poblano and jalapenos. Otherwise, let 'er rip.
I often find myself planning a Tex-Mex inspired party buffet just simply so I have the excuse to serve Creamy, Dreamy Queso. But let's be honest, I think most folks would be delighted to find queso on the table regardless of what's cooking for dinner.
Creamy, Dreamy Queso
Ingredients
· 1 tbsp olive oil
· 4 oz hot pork sausage
· 1 poblano pepper
· 2 jalapenos
· ½ large yellow onion, minced
· 1 tbsp garlic, minced
· 10 oz canned petite diced tomatoes and chilies
· 12 oz evaporated milk
· 1 lb processed cheese (like Velveeta)
· 4 oz pepper jack cheese, shredded
Heat olive oil in the bottom of a large saucepot over medium heat. Add the sausage into the pot. Continue to stir and break apart the sausage until finely crumbled. Cook until golden brown.
Meanwhile finely mince the poblano and jalapeno peppers. For a milder queso, remove the seeds from the peppers before mincing. Reduce the heat to low, and add the peppers, onion, and garlic to the sausage. Cook until the onion is translucent.
Add the evaporated milk and can of tomatoes and chilies. Bring to a simmer.
Cut the processed cheese into 1-inch cubes and add to the pot along with the pepper jack cheese.
Continue to stir the queso over low heat until all the cheese has completely melted.
Pour into a crockpot or fondue pot to keep hot and velvety. Serve with warm tortilla chips.

Notes
Personally, I find chorizo to be a bit too greasy. I’m already eating a vat of cheese, might as well reduce the calorie in-take where possible! Instead, I like to use hot breakfast sausage to bring a depth of flavor to this queso dip.
Remember, you want this queso to easily coat your chip, so think small thoughts and mince those veggies!
