Gouda Egg Bites

Gouda Egg Bites are a subtly smokey, protein-packed breakfast treat. These mini frittatas would compliment any brunch buffet perfectly. But I love these for a quick grab-and-go meal in the mornings.
Egg Bites can be made by the dozens and packed away in the fridge or freezer for breakfast on demand. Just zap in the microwave for a few quick seconds for hot frittata in a flash.
The best part? These bites are easily customized! How about mushroom, ham and swiss? Or a Denver Omelet spin with green pepper, ham and cheddar? A little Tex-Mex flare with poblano, chorizo and pepper jack would also be delightful. Let your stomach be your guide.
Gouda Egg Bites
Ingredients
· 6 slices bacon
· ¾ cup diced red pepper
· 9 eggs
· ¾ cup milk
· ½ tsp salt
· ½ tsp pepper
· ½ tsp garlic powder
· ½ tsp onion powder
· Hot sauce to taste
· 4oz smoked gouda, shredded
Preheat oven to 300F. Fill a 9x13 pan with water and place in the bottom of the oven.
Fry the bacon slices in a pan over medium low heat until crisp. Remove from the pan and drain the bacon on a plate lined with paper towels. Once cooled, crumble the bacon and set aside.
Remove the excess grease from the pan. Over low heat, sautee the red pepper until soft. Remove from the heat and set aside.
In a blender, combine the eggs, milk, spices, hot sauce, and cheese. Blend until smooth and frothy.
Grease a muffin pan liberally with non-stick spray. Pour the egg mixture into each muffin tin. The tins should be about ¾ full. Sprinkle the crumbled bacon and peppers evenly among the tins.
Carefully place the muffin pan on a rack above the water pan. Bake for 30 minutes until the center of the egg bites are set.
Run a knife around the edge of each of the muffin bites while still hot and carefully remove from the pan. Serve warm.
Makes 12 bites
Notes
If freezing for later, allow to cool on a wire rack. Place the egg bites in a single layer in a zip-top plastic bag or container. Store in the freezer. To serve, wrap an egg bite in a damp paper towel and microwave for 60-90 seconds until heated through.
