Hot Cocoa Cookies

Channel a fudgy, brownie-like cookie with a fun little marshmallow topping. My kids got a kick out of these, and I think you will too!


Hot Cocoa Cookies


Ingredients

·       1.5 cups semi-sweet chocolate chips

·       4 tbsp butter, softened

·       ¾ cup brown sugar

·       ¼ cup sugar

·       2 eggs

·       1 tsp vanilla extract

·       ½ tsp espresso powder

·       ¼ cup cocoa powder

·       ¾ cup flour

·       ¾ tsp baking powder

·       ¼ tsp baking soda

·       ¼ tsp salt

·       ½ cup mini chocolate chips

·       1 ½ cups mini marshmallows


Melt the chocolate chips in the microwave in 20 second increments, stirring each time. Allow to cool slightly.


In the bowl of a stand mixer, cream together butter and sugars. Scrape down the bowl and beat in the eggs, vanilla, espresso powder and cocoa powder. Again scrape down the sides of the bowl. Mix in the melted chocolate. Mix in the flour, baking powder, baking soda and salt until just combined. Stir in the mini chocolate chips.


Chill for about 20 minutes.


Preheat oven to 350F.


Using a small cookie scoop, form balls of dough. Place the dough balls on a greased cookie sheet about 2in apart. Using the bottom of a flat juice glass or measuring cup, lightly flatten the cookies.


Bake for about 12 minutes. Immediately after baking, place 3-4 mini marshmallows into the center of each cookie. Cool for 5 minutes on the pan and then move to cooling rack.


Makes 2 dozen

I had greatest success with Cup4Cup gluten free flour blend.
