PB&J Oatmeal


I'm running out of clever things to say about a bowl of oatmeal. But that needn't matter! Oatmeal is good for you, and when you swirl it with Peanut Butter and Jelly it's damn delicious.


PB&J Oatmeal


Ingredients

· 4 cups milk or almond milk

· ¼ cup brown sugar, packed

· ½ cup peanut butter powder (like PB Fit)

· ½ tsp cinnamon

· 1 pinch salt

· 1 tbsp vanilla extract

· 1 cup steel-cut oats

· 4 bananas, sliced

· 4 tbsp strawberry jam


In a medium saucepan, combine the milk, sugar, peanut butter powder, spices and vanilla. Bring to a boil over medium high heat. Whisk in the oats. Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente.


Add sliced bananas to the bottom of a serving bowl. Spoon a portion of the oatmeal over the bananas. Top the bowl with a tablespoon of jam. Serve hot.
