Peanut Butter Drops

Question. Are hatch marks required to call it a peanut butter cookie? My husband seems to think so. As a result, I'm not allow to call these peanut butter cookies... therefore, I dubbed this recipe "Peanut Butter Drops." Regardless of what you call them, they're delicious fudgy and peanut buttery!
Honestly, I'm okay with the distinction. These cookies, while very peanut buttery, have a bit of a different texture than a classic Peanut Butter Cookie. Peanut Butter Drops rely on very few ingredients and come together in a flash sans stand mixer. Making it a perfect mid-week munchie to pull together with my toddler at the counter.
Peanut Butter Drops
Ingredients
· ¾ cup light brown sugar
· 1 egg
· ½ tsp vanilla
· ¾ cup smooth peanut butter
· 2 tbsp flour
· ¼ tsp baking soda
· Flaky salt
Preheat oven to 350F.
Whisk together the brown sugar, egg and vanilla in medium bowl until smooth. Add the peanut butter and whisk until smooth and combined. Sprinkle over the flour and baking soda. Using a spatula, combine the dry and wet ingredients.
Chill for 30 minutes.
Using a cookie scoop, drop dollops of the cookie dough onto a cookie sheet lined with parchment paper leaving about 2 inches between each cookie. Sprinkle the tops of each cookie with a bit of flaky salt.
Bake for 12-14 minutes until golden brown and set. Allow to cool on the cookie sheet.
Makes 14 cookies

I had greatest success with Cup4Cup gluten free flour blend.
