Pulled Pork Totchos

That's right, I said "Totchos." Like Nachos but instead of tortilla chips, I pile up crispy tater tots.


Totchos are pretty much a blank canvas. Gather up your favorite toppings and go to town! When I'm going through the effort to make a big ol' pork butt, I like to stash away a bit of the pull pork int he freezer for the fun and fabulous weekend when I just need a plate of Totchos. Of course, you could always swap the pork for chicken or even black beans!


We tend to air fry in our house for ease of clean up and to save a few calories, but you're welcome to deep fry your tots for added crunch.


Whatever you do, it's gonna be delicious!



Pulled Pork Totchos


Ingredients

· 30oz frozen tater tots

· 2 tomato, seeded and diced

· 3 tbsp cilantro, chopped

· 1 jalapeno, minced

· 2 tbsp red onion, minced

· Juice of a lime

· ½ lb Pulled Pork, warmed through

· ¼ cup pickled jalapeno slices

· 1 avocado, diced

· ¼ cup sour cream


Prepare tots per package instructions until crispy and brown.


In a small bowl, combine the tomato, cilantro, jalapeno, red onion and lime juice to make a quick pico. Set aside.


On the serving platter, alternate layers of pulled pork, queso, pico, pickled jalapenos, and avocado. Top with dollops of sour cream.


Serves 4
