Tater Tot Quiche

I always forget how much I truly enjoy incorporating potatoes into my breakfast recipes. It always makes for a hearty bite and just emanates those cozy, downhome diner vibes.


And come on, who doesn't love a tasty breakfast quiche? The pain-point is usually in preparing the crust. This recipe solves that problem! If you have a bag of frozen tater tots, you can whip up a delightfully crisp and tasty crust.


Parbaking the tots enables you to artfully smush the potatoes just enough to cover the bottom and sides of the pie pan. Scatter over some bacon and cheese, top with an egg custard, and you've got the makings of a easy quiche!


Tater Tot Quiche


Ingredients

·       2-3 cups frozen tater tots

·       6 bacon slices, cut into lardon

·       6 eggs

·       ½ cup half & half

·       ½ tsp paprika

·       ½ tsp black pepper

·       ¼ tsp salt

·       1 cup shredded cheddar

·       3 scallions, sliced, optional

·       Ketchup for serving


Preheat oven to 400F.


Lightly coat a 9-inch pie pan with non-stick spray. Add enough tater tots to cover the bottom and just up the edge of the pie pan. Bake for about 15-20 minutes until fully defrosted and softened.


In the meantime, prepare the filling.


Cook the bacon in a skillet over medium-low heat. Allow the fat to render and the bacon to become relatively crisp. Remove from the pan with a slotted spoon and set aside.

In a large measuring cup, whisk together the eggs, half & half, paprika, pepper and salt until frothy.


Once the tater tots have softened, remove from the oven. Using the bottom of a drinking glass or measuring cup, gently smash the tater tots to form a uniform crust along the bottom and up the sides of the pie pan. This does not need to be perfect.


Scatter the shredded cheese and crispy bacon evenly over the bottom of the parbaked crust. Gently pour over the egg mixture to ensure even distribution of all ingredients.


Lower oven temperature to 350F and bake the quiche for roughly 45 minutes or until the center of the quiche is just set.


Allow to cool for 5-10 minutes. Garnish with sliced scallions. Slice into wedges and serve with a squiggle of ketchup.


Serves 6-8


Notes

Swap the bacon for other mix-ins like crumbled sausage, diced ham or cooked veggies.
