Zucchini Bread Oatmeal

Eating your vegetables never tasted so good! My Zucchini Bread Oatmeal is a mash up of one of my favorite quick breads and creamy steel-cut oats.
Zucchini itself doesn't offer a tremendous amount of flavor. But when combined with cinnamon, nutmeg, walnuts and chocolate chips, you've got yourself a tasty and nutritious bowl of oatmeal! I like to make a huge pot at the start of the week and dip into each morning for a quick breakfast.
Zucchini Bread Oatmeal
Ingredients
· 4 cups milk or almond milk
· ¼ cup brown sugar, packed
· 2 tsp cinnamon
· ¼ tsp nutmeg
· 1 pinch salt
· 1 tbsp vanilla extract
· 2 zucchini, shredded
· 1 ripe banana, mashed
· 1 cup steel-cut oats
· ½ cup chopped walnuts or pecans
· 1/3 cup chocolate chips
In a medium saucepan, combine the milk, sugar, spices and vanilla. Bring to a boil over medium high heat. Whisk in the zucchini, banana and oats. Reduce the heat to low and simmer uncovered for 25-30 minutes until the oats are cooked through but al dente.
Fold in the nuts. Top each bowl individually with chocolate chips. Serve hot.
